Leek and Sweet Potato Frittata (low-amine, gluten-free, soy-free, dairy-free, vegetarian)

I’m usually up to make elaborate meals, but today I wanted something easy. There is very little as easy or as low-amine as a Frittata, and you can make it out of all kinds of leftover vegetables in your fridge, if you didn’t plan on this particular low-amine frittata.

10 eggs (I used 6 eggs and the equivalent volume of four eggs with four egg whites)

1 small sweet potato, cut in half and sliced thinly

1/2 leek, well washed and sliced thinly

1/2 onion, sliced thinly

1 medium or large carrot, sliced thinly

Approx 10 tiny brussels sprouts, halved (or 5 normal-sized ones, quartered)

1/2 tsp salt

1 tsp black pepper

1 tsp garlic powder

1 tsp dill (1 tsp fresh, minced or 2 tsp dried)

1 Tbsp safflower oil

  • Preheat oven to 350 degrees Fahrenheit.
  • Saute oil, onion, and leek together until the onion starts to sweat.

  • Add carrot, sweet potato, dill, salt, garlic powder, and pepper.
  • Saute vegetables, uncovered, on medium to medium high until the carrot and sweet potato start to soften. If they get a tiny bit of char on them, that’s alright.
  • Grease a pie pan with oil or butter.
  • Pour vegetables into pie pan.

  • Crack all eggs into a bowl and beat well.
  • Pour eggs over vegetables.
  • Garnish outer edge of pie pan with brussels sprouts.

  • Crack fresh pepper over the top, and sprinkle with additional dill.
  • Place in oven for 15 minutes.

  • Cut into pie slices and serve warm.
AMINE BREAKDOWN:
Very Low Amine: leek, onion, sweet potato, carrot, brussels sprouts, salt, black pepper, garlic powder, dill
Low Amine: safflower oil
Moderate/High Amine: eggs (the more you cook eggs, the higher  in amines they become)

  2. Can I just say that it is really cool that you have a amine safe website! It’s been really hard to find information about recipes. I have more of a problem with sacililates and gluten and can tolerate a fair amount of amines so some of these recipes aren’t too good for me 😦

    • Thank you so much! I’m sorry to hear that my amine site / low-amine blog isn’t quite as handy for you, since you have a problem with sals… It seems like though there’s some crossover between amines and sals, a lot of it is polar opposite ingredients. High in amines = low in sals, high in sals = low in amines. Sad! I do have a fair amount of gluten-free recipes, though, so maybe some of them can be adapted to a low sals diet by changing out the ingredients?

      Have you found any low-sals recipe/resource sites? I’d love to list them on my blog. Nobody understands amines, sals, or glutamates like people who are allergic to some or all of them, so I’d like to make sure my site helps a bit of everyone (with a focus on amines, of course).

      • Yes it’s so good to know that other people have the same problems, because the average person (and some health professionals) have never heard of amines, sals, etc. I tend to make up my own recipes as well as using this book:

        I don’t think you are based in Australia, but you might want to have a look anyway.

        I’ll have a look through your recipes and see if I can alter anything to suit my diet. I eat gluten-free, low sugar, fructose-free, low amine, salicilate-free, soy free and anything artificial/additive-free. I think that’s all…anyway, I’ll have a browse

        • Indeed, I have their book! It’s very handy, and for anyone with allergies worse than mine (like sals, glutamates, additives, etc), it’s an awesome resource. I developed my blog because I didn’t want to live without anything I didn’t have to. Amines are out for me, but I (luckily) got to keep sals, etc. I figure there must be others out there like me, so here’s to hoping this blog helps them!
